Kitchen Manager

Position Summary

The Kitchen Manager will develop and lead all operations associated with the Gary Comer Youth Center kitchen, Comer Education Campus Food/Catering services and cafeteria usage.  With strong Urban Agriculture Program collaborations, the Manager will lead culinary-based nutritional, engaging, interactive, educational programs and robust youth-employment culinary arts programs.

Qualifications & Requirements
  • • All licenses and certifications required in the City of Chicago (Illinois Department Public Health Food Service and Chicago Department of Heath Certified Food Service Manager) required.
  • Three years of similar experience working in fast-paced culinary positions including food services, leadership, management, administration and kitchen/staff safety required.
  • Demonstrated strong verbal and written communication, organizational and reporting skills.
  • Strong competency in Microsoft Office suite and proficient use or ability to learn standard software including payroll time, and work order management, preferred.
  • Ability to multi-task, troubleshoot and problem-solve effectively required.
  • Flexible schedule for evening hours and weekends required.
Functions & Responsibilities
  • Demonstrated leadership of youth development/programming principles and conflict resolution to deliver engaging quality education in Culinary Arts preferred.
  • Full responsibility to manage a shared-use kitchen and cafeteria, including: hiring, supervision, training and evaluation of instructors and staff to serve food and beverage at appropriate pace in proper portions with a complete understanding of menu items and in a manner to ensure a high level of customer satisfaction.
  • Provides leadership, mentoring, motivation and supervision of youth staff in culinary-based entrepreneurial projects to be well-prepared to enter culinary school or a related work position.
  • Meets mission/program initiatives and designs and executes various culinary arts related classes to youth such as in-and after school electives, school vacation programs and Clubs.
  • Responsible for all administrative needs such as meeting grant requirements, volunteer collaborations, budgets/finance/payroll, routine reporting and record keeping.
  • • Responsible for all food service functions for Gary Comer Your Center daily meals, staff lunches, and catering for special events. This includes: scheduling staff, procurement, preparation, food quality, presentation, and cleaning
  • Development and management of all menus and nutrition programs in partnership with external agencies/providers.
  • Serves as GCYC lead for food/health inspections responsible for safety, cleanliness and sanitation in strict compliance of all kitchen/cafeteria standards and governmental regulations.
Experience & Education
  • Culinary degree or progress toward preferred.
Physical Work Requirements
  • A majority of duties are performed in a kitchen, café or office. Must be able to use standard office equipment and a variety of culinary tools and equipment such as knives, mixers, ovens, stoves, grills, freezers, pots and pans. Occasional outdoor and off-campus catering (picnics, patio) and activities (at Farm).
